My grandmother was an educated lady and she belonged to jameendar(land lord ) family so she always used to make fun of those people who used to cook food in less oil or ghee. She used to call them daridra (poor one) as for her food cooked in less oil could not have been tasty. She was well known for her deep frying. In our home we never used to eat baati , chokha or roasted dishes. Once when my uncle suffered from paralytic attack , I remember comment of one doctor, who was our neighbour , she said " chachiji ki kadhai chadhi rehti thi ye usi ka nateeja hai ". I could not understand why she commented like this but now I can understand . That doctor was a gujrati lady and being a doctor knew very well that what the disadwantages of eating fried food are. Our whole family is educated but fried food is favourite of all. I do not understand one thing and it is what can be the relation between education and eating habits. India is known for her rich food and indians are fond of eating different kind of dishes in every festival . No function can be complete without different tasty dishes and no good dish can be cooked without oil ,ghee or butter. Samosas and gulab jamuns are favourite of all and all know very well that both can not be cooked without deep frying. I was telling about my grandmother and what she thought about those people who used to eat either roasted or food with less oil, for her such people belonged to either poor families or were very miser. These days trend is of different type ,those who want to show that they are well educated so they are health conscious, they avoid deep frying and prefer shallow frying. Some even avoid shallow frying and for them gas fryer is in market means frying with no oil . What would my grand mother have said about such people had she been alive. I have non stick pans and kadai , I also have microwave but seldom do I prefer shallow frying as I do not like the taste of food which is not cooked after deep frying. I do not want to be considered poor or miser. This is different thing that I am suffering from high blood pressure and am a diabitic. I am not a conservative person and I love change in every field but I can not shift from deep frying to shallow frying.
